With a house of five people, we often end up with “unclaimed” items that was once brought into the house, but no one wants. They often sit on the counter for a couple months, and then get tossed in a cleaning session. This time around, we had 2 orphaned cans of peas, so I decided to make pea soup out of them. Here’s my “quick and dirty” pea soup recipe:
- Toss a 1 inch cube of butter into a saucepan
- Add 1 finely chopped onion, wait till it turns slightly translucent
- Add 1 fistful of finely chopped lettuce
- Wash the peas from the cans, toss them in
- Cook them for a little bit, and then cool them before tossing them into the blender
- Pour in a can of chicken stock into the blender, and BLEND
- Pour out back into saucepan, simmer
- Add salt, and a teensie weensie bit of thyme. Be careful, you can overdo this.
- Simmer for 10 minutes, add some milk
- Simmer for 5 more minutes, serve with carrot garnish
